The Bianco has the most personal origin story in Antica Torino's range: the recipe comes from the family of Paola Rogai, the company's office manager, whose great-uncle Carlin lived in the Monferrato hills, worked for FIAT in Turin, and made wine and vermouth from his family's vineyards in the 1940s. Founders Vittorio Zoppi and Filippo Antonelli updated his formula for modern use, keeping its distinctly old-fashioned character. The base blends Italian white grapes — Trebbiano, Chardonnay, Cortese — fortified with neutral wheat spirit and infused with wormwood, marjoram, sage, thistle, thyme, coriander, iris, and licorice, with the licorice macerated separately for 30 days to preserve its pronounced character before blending. Bottled at 16% ABV.
